Abstract
This project was developed in order to find the economic feasibility of dehydrate mushroom scraps with a low cost methodology in Hepperly Enterprises. A Split-Plot experiment was made to find the relevant factors in the configuration of the dehydrator oven composed of a light bulb, a card board box, an air entrance, a grid and a chimney. The factors taken in consideration where the bulb, the diedrite used as a simulator for a dehumidifier, a fan to induce ventilation, and the time in which the samples were removed. The response variable was the weight of the mushrooms taken from five to 30 hours in increments of five hours. The results include a configuration of the oven with a 60 watt bulb, without diedrite and without induced ventilation. Following, the time the bulb must be on was determined with a single factor experiment: Time was the factor and weight of the mushrooms taken every three hours, from a minimum of nine to a maximum of 18 hours as response. It was established that the dehydration process should last nine hours, during which the bulb must be on. Finally, an economic feasibility analysis was performed using the Internal Rate of Return method. In order to compare the alternative of composting different amounts of mushroom scrap versus the alternative of producing mushroom flour with the scrap and the compost without them. It was found that for scrap amounts of four, 4.5 and five percent it is better to produce mushroom flour than only compost.

Este proyecto se hizo con el fin de encontrar la viabilidad económica de deshidratar sobrantes de setas frescas mediante un método de bajo costo en la empresa Hepperly Enterprises. Se realizó un diseño de experimentos tipo Split-Plot para encontrar los factores relevantes para la configuración del horno deshidratador compuesto de un foco, una caja de cartón, una entrada de aire, una parrilla y una chimenea. Los factores tomados en consideración fueron el foco, la diedrita usada como simulador de un deshumidificador, la ventilación inducida por un abanico y el tiempo en el que se removieron las muestras de setas. La variable respuesta fue el peso de las setas tomado desde cinco hasta 30 horas en incrementos de cinco horas. Los resultados incluyen la configuración de un horno con un foco de 60 vatios, sin diedrita y sin ventilación inducida. Luego se determinó el tiempo que debe estar prendido el foco mediante un experimento de un solo factor aleatorio: Se tomó el tiempo como el factor y el peso de las setas medido cada tres horas desde un mínimo de nueve hasta un máximo de 18 horas como respuesta. Se estableció que el tiempo del proceso de deshidratación es de nueve horas siendo éste el tiempo que debe permanecer el foco prendido. Finalmente, se hizo un análisis de viabilidad económica teniendo en cuenta el método de la Tasa Interna de Retorno para comparar la alternativa de compostar diferentes cantidades de sobrantes de setas frescas, con la alternativa de producir harina con los sobrantes y hacer composta sin los mismos. Se encontró que para sobrantes de cuatro, 4.5 y cinco porciento, es mejor realizar harina que solo composta.
