Abstract
En las siguientes páginas se presenta un proyecto enfocado en la documentación y divulgación de los platos tradicionales puertorriqueños elaborados en las comunidades del país, con especial atención inicial en los pasteles de masa. Este trabajo tiene como propósito continuar difundiendo los saberes tradicionales practicados en comunidad-familia, vecinxs, grupos de un mismo entorno- para así evitar su desplazamiento. La investigación se realizó en horas de internado en la organización de base social Comedores Sociales de Puerto Rico, en el municipio de Caguas. Allí se realizaron cuatro encuentros sobre la confección de pasteles, con el fin de documentar y divulgar el proceso comunitario, utilizando la metodología de la historia pública y fundamentos teóricos de la agroecología, el concepto paladar memoria acuñado por el fenecido historiador Cruz Miguel Ortiz Cuadra, y la femealogía, desarrollada por las feministas comunitarias de Guatemala y Bolivia. Como resultado de este proceso investigativo participativo, se diseñaron tres tipos de productos culturales como parte de la oferta que se consolida desde un modelo de negocio de gestión cultural replicable. Tales como: talleres, residencia investigativa y kit educativo sobre historia y comida. Además del diseño de una plataforma digital que sostiene y expone el proyecto desde la documentación y la potencial venta.
In the following pages is presented a project focused on the documentation and dissemination of traditional Puerto Rican dishes prepared in communities across the country, with initial special attention to pasteles de masa. This work aims to continue spreading the traditional knowledge practiced in communities, among neighbors and groups from the same environment to prevent its displacement. The research was carried out through internship hours at the grassroots organization in Comedores Sociales de Puerto Rico, located in the municipality of Caguas. There, four gatherings were held on the preparation of the pasteles de masa to document and disseminate the community process, using the methodology of public history and theoretical foundations of agroecology, as well as the concept of paladar memoria coined by the late historian Cruz Miguel Ortiz Cuadra and feamealogy, developed by the community feminists of Guatemala and Bolivia. As a result of this participatory investigative process, three types of cultural products were designed as part of the offer consolidated from a replicable cultural management business model. Such as workshops, investigative residencies, and educational kits about history and food. In addition to the design of a digital platform that supports and highlights the project through documentation and potential sales.
